The Daiquiri is the platonic rum sour — white rum brightened by fresh lime and just enough sugar to round the edge, shaken hard and served ice-cold and straight up. It takes its name from a mining town near Santiago de Cuba, where American engineer Jennings Cox is said to have mixed the first one around 1898; it was later refined into an icon by Constante Ribalaigua Vert at Havana's La Floridita. Deceptively simple, it lives or dies on balance and good rum.
