Combine bourbon, lemon juice, simple syrup, and egg white in a shaker — no ice.
shake
Dry shake vigorously for 10 seconds to emulsify the egg white.
add
Add ice to the shaker.

Shake again for 10–12 seconds until well chilled.
strain
Fine-strain into a chilled coupe.
garnish
Dash a few drops of Angostura on the foam for aroma and garnish.
