Created around 1916 by Hugo Ensslin at New York's Hotel Wallick, the Aviation took its name from the pale blue hue that crème de violette lends the finished drink, evoking an early-morning sky. Gin forms the backbone while Maraschino adds a subtle nutty sweetness, with lemon juice cutting through and the violet liqueur contributing a floral, almost perfumed quality that makes the drink as aromatic as it is tart.
