Casino

A pre-Prohibition gin sour built on Old Tom gin, with maraschino liqueur for nutty-cherry sweetness, a measured squeeze of lemon, and orange bitters knitting it together. It reads as a drier, more aromatic cousin of the Aviation. First recorded around 1909 and carried into the canon by Hugo Ensslin (1916) and the Savoy Cocktail Book (1930), it faded with Old Tom gin and returned with the craft revival as an IBA "Unforgettable."
