Clover Club

IBA

Named after a Philadelphia gentlemen's club that met at the Bellevue-Stratford Hotel in the early 1900s, the Clover Club predates Prohibition and survived it with its reputation largely intact. Raspberry syrup gives the drink its rosy color and jammy sweetness, balanced by lemon's brightness and gin's botanicals, while egg white lends a silky, cloud-like texture.
