An Italian variation on the Negroni that swaps sweet vermouth for dry, the Cardinale emerged from mid-20th century Rome where French dry vermouth was fashionable among the aperitivo crowd. The result is a leaner, more angular drink — Campari's bitter citrus notes cut sharper against the herbaceous gin without the softening roundness of sweetness.
