Champagne Cocktail

First documented in Jerry Thomas's 1862 bartending guide, the Champagne Cocktail became a fixture of 19th-century European high society and has never fully left it. A sugar cube saturated with Angostura bitters slowly dissolves into sparkling wine, releasing waves of spice and caramel that gradually transform the drink as it's consumed.
