Canchanchara

The Canchanchara is a rustic Cuban classic built on a simple, honest trio: cane spirit, fresh lime, and raw honey, loosened with a little water and lifted over cracked ice. The honey, lime, and water are smeared around the glass to form a thin syrup before the rum is added and stirred up from the bottom, giving a bright, tart-sweet sip with a soft floral edge. Long tied to the colonial town of Trinidad and Cuba's 19th-century history, it traditionally leans on aguardiente de caña, though white rum is the common modern stand-in.
