Jungle Bird

A Malaysian tiki classic that smuggles a bitter backbone into a tropical sour: dark rum and pineapple meet a sharp lash of Campari, with lime and demerara syrup pulling the whole thing into balance. It was born in 1973 at the Aviary Bar of the Hilton Kuala Lumpur, then reshaped decades later by Giuseppe González at New York's Painkiller, whose blackstrap-rum, less-sweet version became the build bartenders now treat as canonical.
