Mexico's most popular tequila cocktail, the Paloma likely emerged in the mid-20th century and is widely attributed to the legendary Jalisco bartender Don Javier Delgado Corona, though its exact origins remain debated. Tequila blanco's peppery, vegetal agave character pairs with the tart bitterness of grapefruit and a squeeze of lime, creating a drink that is at once refreshing, assertive, and dry. It is arguably a more authentic expression of Mexican drinking culture than the internationally dominant Margarita.
