The Ve.n.to is a contemporary Italian sour and the first — still the only — grappa-based drink on the IBA roster. Young white grappa is balanced by fresh lemon, a honey mix, and a chamomile cordial, with an optional whisper of egg white lending a soft, rounded texture. Created around 2019 by Treviso bartender Samuele Ambrosi (building on a recipe from Leonardo Veronesi), its name folds together Veneto and Trentino, the regions that gave grappa its heritage.
