A tall, effervescent cooler of Old Tom gin, lemon, and a touch of sugar lengthened with soda over ice — essentially a sparkling gin lemonade, crisp and easygoing. Its namesake nods to John Collins, a London headwaiter at Limmer's, while the "Tom" comes from the Old Tom gin that came to define it. The drink also rode a wave of fame on the back of the 1874 "Great Tom Collins Hoax." Served in its own Collins glass with a lemon slice and a cherry.
