A startling cocktail built on a full ounce of Angostura aromatic bitters as its spine, tempered by nutty orgeat, bright lime, and a small pour of pisco. The result is a deep reddy-brown sour that is bittersweet and spice-laden rather than overpowering. Created by Italian bartender Valentino Bolognese, it won the Angostura European Cocktail Competition in Paris in January 2008 and went on to inspire the better-known Trinidad Sour.
