The Gibson is a dry gin martini stripped to its essence and given a savory twist: the same cold, spirit-forward backbone of gin and a whisper of dry vermouth, but garnished with a pickled cocktail onion instead of an olive or lemon. That single swap shifts the drink from briny to gently piquant. Its origin is contested — variously credited to illustrator Charles Dana Gibson at New York's Players Club and to businessman Walter D. K. Gibson at San Francisco's Bohemian Club in the 1890s — but it has been a barroom staple since the turn of the twentieth century.
