Jet Pilot

A heavyweight tiki classic descended from Donn Beach's 1941 Test Pilot, the Jet Pilot stacks dark Jamaican, gold Puerto Rican, and overproof demerara rum over lime and grapefruit juice, falernum, and cinnamon syrup, with a dash of bitters and a whisper of absinthe. Flash-blended with crushed ice, it lands bright, spiced, and potent. The recipe was kept secret at Stephen Crane's Luau in 1950s Beverly Hills before Beachbum Berry brought it back to light.

Ingredients

  • 1 ozJamaican Rum(dark)
  • 0.75 ozAged Rum(gold Puerto Rican)
  • 0.75 ozDemerara Rum(151-proof overproof)
  • 0.5 ozLime Juice
  • 0.5 ozGrapefruit Juice(white)
  • 0.5 ozCinnamon Syrup
  • 0.5 ozFalernum
  • 1 dashAngostura Bitters
  • 6 dropAbsinthe

Garnish: Mint Sprig

Preparation

    add

    Combine all three rums, lime juice, grapefruit juice, cinnamon syrup, falernum, aromatic bitters, and absinthe in a blender.

    blend

    Add about 4 oz crushed ice and flash-blend at high speed for under 5 seconds (or short-shake with crushed ice no more than 10 seconds).

    strain

    Pour unstrained, ice and all, into a double old fashioned glass; add fresh crushed ice if needed to fill.

    garnish

    Garnish with a fresh mint sprig.
