Joaquín Simó's inspired substitution of Jamaican rum for gin in the classic Negroni brings the funky, estery, banana-rum character of pot-still Jamaican distillation into dialogue with Campari's bitterness and vermouth's sweetness. Richer, funkier, and more tropical than the Italian original.
