Colonel Joe Rickey's 1883 drink at Shoomaker's Bar in Washington D.C. was originally a bourbon-and-soda before gin took over the recipe — fresh lime juice squeezed and dropped into the glass, gin poured over, topped with soda. Bracingly tart, the Rickey is one of the driest drinks in the canon.
