Nojito

The Nojito is the zero-proof Mojito: muddled mint and fresh lime over crushed ice, sweetened just enough and lengthened with soda water, the white rum simply left out. It keeps everything that makes the Cuban original so refreshing — the bright citrus, the cooling herbal lift, the long fizz — while the rum's place is filled by more soda. The Mojito traces to Havana and the apocryphal "El Draque" of Sir Francis Drake's era; its sober sibling carries that same garden-fresh character into the alcohol-free glass.

  • 6 pieceFresh Mint(lightly muddled to bruise, not shredded)
  • 0.75 ozLime Juice
  • 0.5 ozSimple Syrup
  • Club Soda(to top)

Garnish: Mint Sprig, Lime Wheel

    In a highball glass, gently muddle the mint sprigs with the simple syrup and lime juice to bruise the leaves and release their oils — do not shred.
