A turn-of-the-century Manhattan variation from the Old Waldorf-Astoria Bar, the Suburban deepens a rye base with Jamaican rum and port, then frames it with orange and Angostura bitters. The result is dark, tannic, and faintly funky — sweeter and more brooding than a straight Manhattan. It was named for the Suburban Handicap, the famed Sheepshead Bay horse race, one of several drinks the Waldorf coined for the Gilded Age racing set around James R. Keene.
