The Boothby is a Manhattan dressed for a celebration: rye whiskey stirred with sweet vermouth and two kinds of bitters, strained into a chilled coupe and crowned with a float of Champagne. The sparkling wine lifts the drink's spirit-forward backbone with a dry, effervescent edge. It's credited to William "Cocktail Bill" Boothby, who is said to have devised it around 1900 at the Pied Piper Bar in San Francisco's Palace Hotel, though it didn't reach print until his posthumous 1934 book.
