A pared-back classic of nothing but gin and bitters: a chilled glass is coated with a few dashes of Angostura, then filled with very-cold Plymouth gin and finished with an expressed lemon twist. Said to have been born aboard Royal Navy ships in the mid-1800s, where sailors cut their medicinal seasickness bitters with gin to make them go down easier, it became a fashionable order in English clubs by the 1870s. Aromatic, dry, and bracingly spirit-forward.
