The Greyhound is the plainest of pleasures: a wash of tart grapefruit juice over vodka, poured tall on ice. It takes its name from the Greyhound bus company, whose Post House restaurants poured a version at terminal counters in the 1940s — a recipe Harry Craddock had foreshadowed with his "grapefruit cocktail" in the 1930 Savoy Cocktail Book. Originally built on gin, it turned to vodka after the war. Salt the rim and it becomes a Salty Dog.
