A gin sour with a twist of the teacup: Earl Grey-infused gin lends bergamot and tannin, lemon and simple syrup frame it as a classic sour, and an egg white whips it into a silky, foam-capped pour. Created around 2003 by Audrey Saunders at New York's Pegu Club, it was a quiet manifesto of the cocktail revival — the egg binds the tea's tannins much as milk does in a proper cup, softening the edges into something plush.
