Matador

A bright, three-ingredient tequila sour that leans on pineapple's natural sweetness instead of added syrup, balanced by a squeeze of lime. It pours together three Mexican exports — agave spirit, pineapple, and lime — into a clean, refreshing whole. The pineapple version was codified in Trader Vic's Bartender's Guide in 1972, one of a family of bullfighting-themed tequila drinks; an unrelated namesake from the 1937 Café Royal book mixed tequila with curaçao and vermouth.
