Nui Nui

A spiced 1930s tiki classic from Donn Beach's Don the Beachcomber, where it first appeared under the name Pupule before becoming the Nui Nui. Aged rum is layered with equal parts orange and lime, then warmed by cinnamon and vanilla syrups and a measure of allspice dram, with Angostura tying the spices together. A long-lost house secret, its recipe was finally decoded by cocktail historian Jeff 'Beachbum' Berry. Served over crushed ice, it drinks rich, autumnal, and deceptively easygoing.

Ingredients

  • 2 ozAged Rum
  • 0.5 ozLime Juice
  • 0.5 ozOrange Juice
  • 0.25 ozCinnamon Syrup
  • 0.25 ozVanilla Syrup
  • 0.25 ozSt. Elizabeth Allspice Dram
  • 1 dashAngostura Bitters

Garnish: Orange Peel

Preparation

    Combine the aged rum, lime juice, orange juice, cinnamon syrup, vanilla syrup, allspice dram, and Angostura bitters in a shaker.

    Add a scoop of crushed ice and shake briefly but energetically (flash shake).

    strain

    Pour into a tiki mug filled with fresh crushed ice.

    Top with additional crushed ice to fill.

    Garnish with a long orange peel and a dusting of cinnamon.
