A vodka-based cousin of Brazil's national Caipirinha, the Caipiroska swaps cachaça for neutral vodka, letting the muddled lime and sugar sing front and center. Fresh lime wedges and sugar are pressed together in the glass, vodka is stirred through, and the drink is mounded over crushed ice — tart, bracing, and clean. It spread across South America and beyond as imported vodka grew more common in the 1980s, and no single bar can claim it.
