A modern riff on the Martini from bartender Julie Reiner, devised in 2008 as the house pour for the opening menu of her Brooklyn bar, Clover Club. Equal measures of piney gin and floral bianco vermouth are lifted by dry apricot eau-de-vie and two dashes of orange bitters, then stirred and strained beneath an expressed orange peel. The result is aromatic and faintly fruity yet bracingly dry — a Martini dressed up rather than sweetened.
